James Beard Award-winning chef Ken Oringer announced plans to open his sixth Boston restaurant.
COPPA, which will be located in the city's South End just six blocks away from his Barcelona-themed tapas bar TORO, is slated to open in late August as an Italian enoteca (wine bar). Web site will be live soon. www.Coppaboston.com.
Oringer and partner Jamie Bissonette, currently chef de cuisine @ Toro, are developing an Italianate menu of small plates, handmade pasta, pizzas, and the charcuterie and nose-to-tail cooking for which the two men are both renowned. Prices will be under $13.
Bissonette's wife Courtney will run the front of the house, which holds just 40 seats indoors, plus 24 more on a brick patio outside. Italian wines and artisinal beers will be poured, and ingredients will be "as local and sustainable as humanly possible," promises Oringer.
The South End, where Oringer and his family reside, has rapidly become a stronghold of small, independent, cutting-edge restaurants: Sage, Pho Republique, Banq, Estragon, Stella and Orinoco among them. The COPPA space, 253 Shawmut Avenue at Union Park, was formerly occupied by Dish.
Oringer's apparent desire to fulfill his culinary wanderlust in virtually every pocket of the city has resulted in:
CLIO (French) in 1997
UNI (Japanese sushi and sashimi) in 2002
TORO (Spanish) in 2005
KO PRIME (modern steakhouse)
LA VERDAD (Mexican) in 2006

(Bloomfield, CT) Thomas Hooker Brewing Company, Connecticut's award-winning Craft Brewing Company has produced an exclusive premium ale for Max Restaurant Group. Max's "No Name" Pale Ale is an amber colored beer that blends traditional characteristics of American Pale Ale and IPA styles. A caramel sweetness in the malt balances out the Cascade hop flavor, which provides a full. but refreshing taste. The beer is collaboration between the Thomas Hooker Brewing Company and the Max Restaurant Group.
Curt Cameron from Thomas Hooker Brewing said, "We actually had focus group meetings at the brewery, which incorporated blind tastings of various styles and brands that currently popular in the market now." Cameron went on to say "we wanted to create a beer that was enjoyable on its own, yet complex enough to pair well with food from all the Max restaurants."
Founder/Owner Richard Rosenthal added, "after literally hours of tastings and discussions, the result of our collective efforts was Max's No Name Ale. The public response has been phenomenal and (No Name)has jumped to the #1 in our premium beer selections." The Max Restaurant Group, an independent multi-unit operation throughout Connecticut and Massachusetts will be running a naming contest. For more information
